Abstract: Offal, considered a basic element of Kyrgyz cuisine, is a food frequently consumed in families' homes, especially in rural areas where the traditional lifestyle continues. In this context, dishes with offal are carefully prepared and served with great care, especially on special occasions such as special celebrations. Purpose of the study, To investigate whether ethno-restaurants in Bishkek have traditional dishes made from traditional offal products. However, in ethnic restaurants, where customer preferences and diversity are taken into account, dishes containing offal may be served in limited quantities. This may be associated with the fact that some people prefer traditional meat dishes or avoid consuming offal due to personal preferences. However, offal is considered an integral part of Kyrgyz cuisine and adds a distinctive flavor and textures to dishes. Specialized restaurants aiming to introduce Kyrgyz cuisine with its unique flavors offer traditional offal dishes such as "byzhy", "kazy-karta", "chuchuk" or "kuyruk-boor", offering diners the opportunity to experience this rich gastronomic world. The results of our research show that traditional offal dishes are limited in the menus of ethno-restaurants in Bishkek. The analysis of literary sources and scientific studies indicate that the consumption of offal in Kyrgyzstan is limited. Only a few restaurants in Bishkek focus on Kyrgyz cuisine, and traditional dishes are usually not served in these restaurants. This study aims to identify the dietary habits that develop in this new environment, shedding light on the fact that some habits formed within the family context persist in this novel setting. The dietary habits of Kyrgyz-Turkish Manas University students were investigated through a questionnaire, and the results were analyzed using the SPSS software. Through surveys, interviews, we seek to gain insights into the eating behaviors and preferences of the student population, as well as any factors that may influence their food choices. They lived together with Scythians, Huns, Gokturks and Uyghurs for many centuries. This geographical proximity made the struggle for dominance inevitable.The Kyrgyz had a power that could easily fight the Huns demographically. This caused military struggles to be very violent and destructive. It will be seen that with the collapse of the Uyghurs, Turkish domination weakened in the Yenisey-Angari and Altai-Sayan areas. Although the Kyrgyz dominated the region for a short time, military superiority would be lost with the arrival of the Mongols in the region. The Kyrgyz, who were exiled during the Huns, Gokturks and Uyghurs, would suffer even heavier blows from the Mongols. The Mongols will see the Kyrgyz as a threat due to their military power and rebellion and will exile them to the farthest regions. They will settle them among the Mongol tribes to carry out the demographic massacre. They will continue their settlement policy for approximately four hundred and five hundred years. This will cause the Kyrgyz to suffer great losses and melt away. The Kyrgyz, who began to mix and integrate with the Mongols, will undergo ethnic assimilation for a while. During this period, there will be mixing with mongoloid groups. At the same time, some Mongol tribes will begin to join the Kyrgyz tribe union. Although physical interaction is inevitable, since this unity does not last long, the Kyrgyz will experience a superficial ethnic change during this period. The subsequent developments will give the Kyrgyz people the chance to return and settle in their lands again. The Kyrgyz will again establish their own clan unions in the Yenisei-Altay area. It is understood that the Kyrgyz people experienced a process of ethnic integration again as they began to migrate to the Tanrıdağı region over time. The physiognomic changes experienced by the Kyrgyz people, who preserved their brachycephalic anthropometric features throughout this dynamic process, during the Middle Ages were examined. This ethnic change will be examined step by step and the processes that left their mark on the Kyrgyz people will be revealed in detail in our research. The interpretation expressions that give meaning to music and have a significant impact are present in the language of music. This study aims to investigate the usage of nuance terms in piano lesson textbooks of Fine Arts High Schools. In terms of vocational music education in our country, Fine Arts High Schools hold an important place, where the piano is a mandatory instrument. By examining the usage of nuance markings found in piano lesson textbooks of Fine Arts High Schools, various findings have been obtained and recommendations have been made based on these findings. This research, designed descriptively, utilized the document analysis method. In this context, piano lesson textbooks used in Fine Arts High Schools (9th, 10th, 11th, and 12th grades) were examined. The resulting data were categorized according to sub-problems and presented in the findings section. According to these findings, the usage of nuance terms was distinguished according to music forms, revealing that they were used to a significantly lesser extent in etudes (22%) but were highly prevalent in compositions (91.7%). As a result, it was revealed that the usage of nuance in the textbooks begins slightly later than the generally accepted practice. Based on the research findings, it is recommended that new piano lesson textbooks should start incorporating nuance usage at an earlier stage and provide more colorful options. He was an exemplary person who tried to be beneficial to the ummah throughout his life and did not pay attention to people's criticism for this purpose, earning the respect and admiration of even his enemies.
